BBs Anything Goes Ground Beef Soup

Tonight's Anything Goes Hamburger Soup I am making for the TGIF Potluck is a spur of the moment idea brought on by a lot of rain I didn't want to drive to town in. It was thrown together from a package of four Angus burgers, half of a tube of ground beef, and a package of steamed garlic peas and mushrooms I had in the freezer.  I also added a few cans of V8 juice, half spicy, half regular, a small can of mixed vegetable, a small can of sliced carrots, a can of Mexican style corn that were in the pantry, and two large potatoes I happen to have in the crisper drawer of the fridge. I tossed in a couple of pinches of rosemary leaves, a good dash of ground oregano, a little ground marjoram, and a little salt and pepper.  I will microwave, then add the steamed garlic peas and mushrooms about an hour before I take the soup over to the Clubhouse for the TGIF Potluck Dinner.

Chicken Enchiladas

I have been looking for this recipe for the past 20 years!!!! Finally found it!!!! *These are seriously so so good*

10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese ( I like the Kraft Tex Mex)
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream ( I use Greek yogurt)
1 (4 oz) can diced green chillies (these are not hot)
1. Preheat oven to 350 degrees. Grease a 9x13 pan
2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min and then under high broil for 3 min to brown the cheese.

1 pkgdry cake mix-white, yellor or french vanilla
1/3 cbutter, room temperature
2 largeeggs, divided
29 ozcan light peach slices, drained
8 ozcream cheese, room temperature
1/3 csugar
1 tsppure vanilla extract

Directions

 Preheat oven to 350 degrees.
Spray a 9x13” pan with nonstick cooking spray.

 In a large bowl combine cake mix, butter and 1 egg; mix with fork just until crumbly.
Set aside 1 ½ c. crumbs for topping.

 Press the remaining crumbs on bottom of prepared pan; Bake 10 minutes.

 Cut peach slices into 1” pieces; Spoon onto partially-baked crust.

 In a large bowl, combine cream cheese, sugar, 1 egg and vanilla extract; beat with mixer until creamy.
Spread over top of peaches.

 Sprinkle with reserved crumbs; Bake 30 minutes.

 Chill at least 30 minutes before serving; Serves 12.
Store leftovers in refrigerator.

Peel the Shells Off a Bunch of Hard Boiled Eggs in Under 10 Seconds


Want to shell a bunch of boiled eggs fast? As this Japanese variety show demonstrates, all you need is a Tupperware container and a quick shake to shell multiple eggs all at once.
Fill the container half with water (as a bonus, you can use it for cooling down your eggs after boiling). Close and shake vigorously. The shells pretty much fall off the eggs. In the video above, "Ultraman" does 5 eggs in 10 seconds, but most of that time was taking the eggs out of the container.
This is a variation on the previously mentioned "bumper car" method, where you shake the boiled eggs in a pan (and not unlike peeling garlic with a good shake). After trying the Tupperware method this morning, I have two pieces of advice: Use a shallow container and shake really hard.
